The MTB handlebar is the component that differentiates a bike between the different types of disciplines. The road bike handlebar is curved and allows several control options, in BMX the handlebar has a really high rise to make extensions easier, while in MTB the handlebar is wide and rather flat.
The MTB handlebar is a peripheral like the seatpost: it supports the arms of the rider, especially to control a mountain bike. You'll control your bike with your MTB handlebar. The handlebar is fixed on the stem that links it to the fork.
There are usually two materials for MTB handlebars, either aluminium or carbon. The latter is increasingly present on the market as it brings rigidity and lightness.
